    Cube the chicken and add to a large pot with enough water to cover and cook over medium heat for 20 minutes. Save the broth for later.

    Additionally, tomatoes, onion, 1 clove of garlic and a teaspoon of bouillon can be added to taste.

    On a griddle or dry pan, roast the bell peppers, spring onions, miltomates, cilantro sprigs, and garlic.

    Roasting deepens the flavor of these ingredients and gives the sauce its characteristic color.

    When all the ingredients are roasted, grind with a mortar and pestle until smooth.

    This step can also be done with a blender.

    Strain the sauce and gradually add the reserved chicken broth until the desired consistency is reached.

    If the consistency is too watery, grind the bread and add to thicken.

    Cook over medium heat for 15 more minutes.
