General information

The name “mole” comes from the náhuatl word “molli” or “mulli”, which means “ground or pulverized”. This dish has its origins in pre-Hispanic cuisine prepared for ceremonial purposes. Spices like cinnamon and sesame were introduced following the Spanish conquest of Mesoamerica, a region encompassing parts of Mexico and Central America. Variations and different combinations of the recipe, both savory and sweet, have been created throughout the region.

    Cut the chicken into smaller portions and place it in a pot with enough water to cover the pieces. Add the garlic and salt. Cook over medium heat for about 25 minutes. Once cooked, save the broth for later.

    Separately, on a dry griddle or in a frying pan, roast the pumpkin seeds, sesame seeds, poblano peppers, bell pepper, onion, tomato, miltomate without the husk, and garlic. Then, briefly add the chocolate.

    Once the ingredients are roasted, grind them individually using a mortar and pestle.

    Separately, crumble the bread. Once the other ingredients are ground, fold the bread until a thick, uniform paste forms.

    When the mixture is ready, gradually add the broth. Using it will intensify the flavor and create a rich, thick sauce.

    In a separate saucepan, add some oil and lightly brown the chicken. Once it´s ready, add the sauce and simmer for 15 minutes to let the flavors meld. Garnish with sesame seeds.
